AB  - The aim of this study was to choose the genotypes of industrial tomato for the content of bioactive components (ascorbic acid, beta-carotene, lycopene, total phenols and flavonoids) in fruits and its preservation during thermal treatment (by drying with parallel warm air at 60 degrees C) and making of tomato juice (by pasteurization - cooking at 100 degrees C for 7 minutes). For this research, a comparative trial has been set up with 7 genotypes, 1 commercial variety (SP-109) and 6 selected lines (SPP, SPSM, SPRZ, SPRM-20, S-60 and SPO) of high inbreeding generations. Experimental design has been done according to standard method of growing industrial tomato in random block system with three replications. By analysing the cumulative results of all researched genotypes for processing industry, the best for drying and fresh consumption was SPRZ and for juice extraction, SPSM was the best line.

AB  - Cilj istraživanja bio je da se odredi sadržaj likopena, vitamina C i ukupna
antioksidativna aktivnost kod različitih hibrida paradajza gajenog u zaštićenom
prostoru, tipa plastenika. U radu su analizirani rezultati vegetacionih ogleda i
laboratorijskih analiza za tri nova hibrida paradajza. Rezultati ovih istraživanja pružiće
doprinos o antioksidativnoj aktivnosti paradajza i njegovoj sveukupnoj lekovitosti,
posebno kod novih hibrida koji se uvode u proizvodnju u zaštićenim prostorima.
AB  - The aim of this study was to determine the content of lycopene, vitamin C and total
antioxidant activity in different hybrids of tomatoes grown in greenhouses, greenhouses
type. The paper analyzes the results of the growing trials and laboratory analysis for the
three new tomato hybrids. The results of these studies will provide a contribution to the
antioxidant activity of tomatoes and its healing properties overall, especially in new
hybrids to be introduced into production in protected areas.

Antioxidant and bioactive components (Carotenoid content) of tomato selection

AB  - Twenty tomato genotypes from the Institute for Vegetable Crops, Smederevska Palanka, Serbia were grouped in order to define the start material for breeding of cherry type tomato. Grouping was performed according to the average level of carotenoid (lycopene, β-carotene), total soluble solids (TSS) and fruit weight by applying PCA (Principal component analysis). The lowest level of lycopene was found in the genotype GK 115 (1.109 mg/100 g), and the highest level of lycopene in genotypes with extremely red fruits GK 128 (4.642 mg/100 g). In the studied genotypes the level of β-carotene varied from 0.015 mg/100g in GK115 to 0.454 mg/100 g in GK 133. The level of TSS was from 4.52 GK104 to 8 GK121. Fruit weight of the researched genotypes was divergent-from 11.8 g in GK133 to 306.4 g in GK121. The first two components explain 70.451% of total variability. The first main component was influenced by two (fruit weight and total soluble solids-TTS) out of four researched traits. The second main component (PC2) was influenced by the lycopene level, the third by β-carotene, while the fourth was influenced by TSS. Correlation matrix proved low correlation among the researched traits included in this study.

Bioactive components in breeding industrial tomato

AB  - Selection of tomato lines for industrial use regarding their nutritional value is a potential that will reflect in the final product obtained from tomato fruits. At the same time, technological process of preparation of tomato juice (100 °C), as well as hot air drying, was studied in order to establish an optimal technological process that is the least disrupting for the natural potential of nutrients contained in fresh fruits. The research was performed on 6 lines and one variety of industrial tomato. The content of vitamin C, vitamin E, lycopene, β-carotene, phenols, flavonoids, dry matter and total antioxidative capacity was studied by applying standard methods for determination of the level of these parameters. Grouping was performed according to traits of average carotenoid content (lycopene, β-carotene), vitamin C, vitamin E, phenols, flavonoids, dry matter and total antioxidative capacity in tomato fruit, by applying PCA. The first two principle components were responsible for 77.18 % of total variability of researched samples. The impact of other five components was low and they were responsible for 22.18 % of the variability. Antioxidative activity was best preserved after finishing, through small losses of lycopene and β-carotene. Losses of vitamin C, vitamin E, phenols and flavonoids during thermal processing were great, mostly in juice, while in dried product, these losses were lower. Nutrient losses were in function of temperature height that the fruits were exposed to during the thermal processing. Genotypes SPRZ and SPSM were marked as the best.
AB  - Selekcija linija paradajza namenjenog industrijskoj preradi prema osobinama koje definišu njihovu nutritivnu vrednost predstavljaju potencijal koji će se reflektovati u proizvodu dobijenom od plodova paradajza. U isto vreme ispitan je i tehnološki proces pripreme soka paradajza (100 °C) kao i sušenje plodova na toplom vazduhu, kako bi se utvrdio optimalni tehnološki proces koji najmanje narušava prirodni potencijal nutrijenata sadržanih u svežim plodovima. Ispitivanje je sprovedeno na 6 linija i jednoj sorti industrijskog paradajza gde su ispitani sadržaj vitamina C, vitamina E, likopina, β-carotina, fenola, flavonoida, suve materije i ukupni antioksidativni kapacitet, standardnim metodama za utvrđivanje sadržaja ovih parametara. Grupisanje je izvršeno prema osobinama prosečnog sadržaja karetinoida (likopen, β-karoten), vitamina C, vitamina E, fenola, flavonoida, suve materije i ukupnog antioksidatinog kapaciteta u plodu paradajza, pomoću PCA analize. Prve dve principle komponente odgovorne su za 77,18 % ukupne varijabilnosti ispitivanih uzoraka. Uticaj ostalih pet komponenti je mali i one su odgovorne za 22,18 % varijabilnosti. Antioksidativna aktivnost je najbolje očuvana posle dorade kroz male gubitke likopina i β-karotina posle dorade. Gubici vitamina C, vitamina E, fenola, flavonoida pri termičkoj obradi su veliki i to najviše u soku, dok kod sušenog proizvoda ti gubici su nešto manji. Gubici nutrijenata su u funkciji visine temperature kojima su plodovi bili izlagani pri termičkoj obradi. Kao najbolji genotipovi ocenjeni su SPRZ i SPSM.

AB  - The objective of this study was the determination of total antioxidant activity, contents of vitamin E, sugar and total dry matter in fresh and thermally processed (dried and juiced) tomato fruits of different selected tomato lines with the aim to establish the nutritive profile and distinguish superior genotypes in order to obtain high-quality final product with more benefit to human health. Content of vitamin E, total antioxidant activity, dry matter and total sugars, in fresh and dried fruits (dried in parallel hot air dryer at 60 °C, until the final product reached the moisture lower than 10% and in tomato juice pasteurized at 100 °C, for 7 minutes) was studied. Comparative trial with 7 genotypes: one commercial variety (SP-109) and 6 selected high inbreeding generation lines (SPP, SPSM, SPRZ, SPRM-20, S-60 and SPO), was set up. Genotype SPRZ had the highest vitamin E content and total antioxidant capacity, both in fresh fruit and after the treatments. Thermal processing by drying at 60°C and pasteurization of tomato changed the level of total sugar and dry matter content. Total antioxidant activity decreased by drying, comparing to fresh fruit while the level of vitamin E decreased in juice pasteurized at high temperature (100 °C). .
AB  - Cilj istraživanja je određivanje ukupne antioksidativne aktivnosti, sadržaja vitamina E, sadržaja šećera i ukupne suve materije u svežim i termički obrađenim (sušeni plodovi i sok) plodovima različitih selekcionih linija paradajza, sa ciljem utvrđivanja nutritivnog kvaliteta i izdvajanja superiornih genotipova, čijom preradom bi se dobio kvalitetniji krajnji proizvod sa pozitivnim dejstvom na ljudsko zdravlje. Ispitivani su sadržaj vitamina E, ukupna antioksidativna aktivnost, suva materija, i ukupni sadržaj šećera, kod svežih plodova, sušenih plodova (sušenje toplim vazduhom na 60 °C, do konačne vlage uzorka manje od 10%) i soka paradajza (pasterizacijom na 100 °C, u trajanju od 7 minuta). Izveden je komparativni ogled sa 7 genotipova, jedna komercijalna sorta (SP-109) i 6 selekcionisanih linija (SPP, SPSM, SPRZ, SPRM-20, S-60 I SPO) visokih generacija inbridinga. Termička obrada plodova paradajza (sušenjem na 60 °C) i pravljenjem soka dovodi do promene ukupnog sadržaja šećera i sadržaja ukupne suve materije. Ispitivanjem ukupne antioksidativne aktivnosti utvrđeno je da se ona gubi sušenjem u odnosu na svež plod, a sadržaj vitamina E se smanjio u soku koji je dobijen obradom na višim temperaturama (100 °C). Genotip SPRZ imao je najviše vrednosti za sadržaj vitamina E i ukupan antioksidativni kapacitet kako u svežem stanju tako i nakon primenjene obrade. Izborom superiornih genotipova i akumulacijom nutrijenata kroz oplemenjivačke programe, može se poboljšati kvalitet krajnjeg proizvoda i postići dobijanje prerađevina sa većim pozitivnim uticajem na zdravlje ljudi.

Chemical composition of extracts of pepper and tomatoes in Western Serbia

AB  - The various types of vegetables used in the diet daily contain various active components that have biological activity. Among others, it is considered that phenolic compounds can represent a possible target group with antioxidant and antimicrobial properties, which participate in inhibition of oxidation and protect the organism (Kähkönen et al., 1999). Based on these facts, the aim of the research was to investigate the chemical composition and the antioxidant effect of Capsicum annuum L. peppers and tomatoes Lycopersicon esculentum Mill., Produced in Western Serbia, Moravica District, municipality of Cacak. The IC50 is an anoxidative capacity measure, which is less, the antioxidant activity is more pronounced. The IC50 value is the concentration of the test compound that reduces the free radical release concentration by 50%. The IC50 values of the investigated extracts show that the pepper extract (Capsicum annum L.) has a lower IC50 value (13.79 μg / mL) than the tomato extract with an IC50 value (17.41 μg / mL). Antioxidant activity increased in IC50 values better in pepper extract compared to tomato extract.
AB  - Različite vrste povrća koje se koriste u ishrani svakodnevno, sadrže različite aktivne komponente koje imaju biološko delovanje. Između ostalih, smatra se da fenolna jedinjenja mogu da predstavljaju moguću ciljnu grupu sa antioksidativnim i antimikrobnim svojstvima, koja učestvuju u inhibiciji oksidacije i vrše zaštitu organizma. Polazeći od navedenih činjenica sam cilj istraživanja bio je ispitivanje hemijskog sastava i antioksidativnog delovanja ekstrakata paprike Capsicum annuum L. i paradajza Lycopersicon esculentum Mill., proizvedenih u Zapadnoj Srbiji, Moravički okrug, opština Čačak. IC50 je mera anioksidativnog kapaciteta i što je vrednost manja, aktivnost antioksidanata je izraženija. Vrednost IC50 je koncentracija testiranog jedinjenja koje smanjuju polaznu koncentraciju slobodne radikalske vrste za 50%. IC50 vrednosti ispitivanih ekstrakata pokazuju da ekstrakt paprike (Capsicum annum L.), ima manju vrednost IC50 (13,79 μg/mL), u odnosu na ekstrakt paradajza čija je IC50 vrednost (17,41 μg/mL). Antioksidativna aktivnost uzražena u IC50 vrednostima bolja je kod ekstrakta paprike u odnosu na ekstrakt paradajza.

AB  - Onion (Allium cepa L.) is a very important and widespread vegetable crop. Bulb shape index is a very significant biological and commercial trait. Bulb shape impacts the price, processing, resistance to diseases, etc., which is the reason why it is a very important economical trait. Success of the breeding process depends on genetic determination of the traits that were targeted in the selection process. In order to assess the genetic determination of bulb shape index, the trial was set up in the random block system with five replications, with diallel crossing without reciprocals. Bulb shape index in F1 generation was from flat-round to oval shaped. The most common heredity mode of the bulb shape index was superdomination. The highest value of GCA for shape index was found in 'Makoi bronzi', which was the indicator of the best combining abilities. The highest SCA in F1 and F2 generation was found in the hybrid 'Makoi bronzi' x 'AC 101'.
AB  - Crni luk (Allium cepa L.) je izuzetno važna i široko raspostranjena povrtarska vrsta. Indeks oblika lukovice crnog luka predstavlja veoma značajno biološko i tržišno svojstvo. Oblik lukovica ima uticaja na tržišnu cenu crnog luka, proces dorade, otpotnost na bolesti, itd. Zbog ovoga, indeks oblika se ubraja u važnu ekonomsku osobinu lukovice crnog luka. Genetska determinisanost osobine utiče na uspešnost procesa selekcije. Kako bi utvrdili genetsku determinisanost indeksa oblika lukovice, postavljen je ogled po slučajnom blok sistemu u pet ponavljanja. Primenjen je metod dialelnog ukrštanja bez recipročnog. Posmatrajući hibridne kombinacije Fi generacije može se uočiti da se njihov indeks oblika lukovice kretao od pljosnato-okruglog do ovalnog. Najzastupljeniji način nasleđivanja indeksa oblika lukovice u ovom istraživanju je super dominacija. Najveću vrednost OKS za indeks oblika imala je linija 'Makoi bronzi'. Najvišu vrednost za PKS u F1 i F2 generaciji imao je hibrid dobijen ukrštanjem linije 'Makoi bronzi' x 'AC 101'.

Analysis and forecasting of profit by using simulation models for growing pea in conventional and organic plant production in Serbia

AB  - Bean is the third most important food legume crop of the world after soybean and groundnuts; it provides an important source of dietary proteins, carbohydrates, minerals and fiber essential in human nutrition worldwide. A high, per capita bean consumption of 13 to 40 kg yr-1 was observed in developing countries. In EU developed countries, market of the organic products is growing in average 10 % per annum, but this growth has not been followed by production growth and this is the chance for Serbian products. Organic bean growing enables the producers a higher profit. Expenses in organic production are higher (2170 EUR/ha) than those in conventional bean production (1825 EUR/ha). However, net profit in the organic production was estimated to 1440 EUR/ha, while the profit in the conventional concept was 315 EUR/ha. Also, profitability rate and the economic efficiency coefficient had higher values when growing bean in organic concept.
AB  - Gajenje pasulja u skladu sa organskim principima omogućava proizvođačima veći profit u odnosu na konvencionalni sistem gajenja. Ispitivana i komparirana je proizvodnja pasulja u konvencionalnom i organskom sistemu gajenja metodama bazičnih ekonomskih parametara a za metodu prognoze korišćena je Monte Carlo simulacija na osnovu projektovanih prosečnih tržišnih cena po jedinici proizvoda. Troškovi u organskoj proizvodnji su veći (2170 EUR /ha) od troškova u konvencionalnoj proizvodnji pasulja (1745 EUR /ha). Međutim, ostvarena dobit u konceptu organske proizvodnje je iznosila 1402 EUR /ha, dok kod konvencionalnog koncepta je 955 EUR /ha. Takođe, stopa rentabilnosti poslovanja kao i koeficijent ekonomičnosti su imali veće izračunate vrednosti u gajenju pasulja po konceptu organske biljne proizvodnje. abstract = "Bean is the third most important food legume crop of the world after soybean and groundnuts; it provides an important source of dietary proteins, carbohydrates, minerals and fiber essential in human nutrition worldwide. A high, per capita bean consumption of 13 to 40 kg yr-1 was observed in developing countries. In EU developed countries, market of the organic products is growing in average 10 % per annum, but this growth has not been followed by production growth and this is the chance for Serbian products. Organic bean growing enables the producers a higher profit. Expenses in organic production are higher (2170 EUR/ha) than those in conventional bean production (1825 EUR/ha). However, net profit in the organic production was estimated to 1440 EUR/ha, while the profit in the conventional concept was 315 EUR/ha. Also, profitability rate and the economic efficiency coefficient had higher values when growing bean in organic concept., Gajenje pasulja u skladu sa organskim principima omogućava proizvođačima veći profit u odnosu na konvencionalni sistem gajenja. Ispitivana i komparirana je proizvodnja pasulja u konvencionalnom i organskom sistemu gajenja metodama bazičnih ekonomskih parametara a za metodu prognoze korišćena je Monte Carlo simulacija na osnovu projektovanih prosečnih tržišnih cena po jedinici proizvoda. Troškovi u organskoj proizvodnji su veći (2170 EUR /ha) od troškova u konvencionalnoj proizvodnji pasulja (1745 EUR /ha). Međutim, ostvarena dobit u konceptu organske proizvodnje je iznosila 1402 EUR /ha, dok kod konvencionalnog koncepta je 955 EUR /ha. Takođe, stopa rentabilnosti poslovanja kao i koeficijent ekonomičnosti su imali veće izračunate vrednosti u gajenju pasulja po konceptu organske biljne proizvodnje. The germination percentage of eggplant seeds based on pretreatments effects

AB  - Five genotypes were selected with 2 lines (33 and 34 not dormant) for testing was used. Three genotypes originating from germplasm collection eggplant Institute: 2-02619 (dormant), 7-00568, 12 - 0082. The cooling treatment (HLS) was performed at 4°C for 96 hours (4 days), 72 hours (3 days) and 48 hours (2 days) continuously. Hormonal treatment with gibberellic acid (GA3) is made with three concentrations: 5 ml / 100 ml; 15 ml / 100 ml and 25 ml / 100 ml, for 24 hours after which the seeds are placed to germinate. Chemical treatment was carried out as potassium nitrate KNO3 at a concentration of 0,5, 1 and 1,5% solution for 24 hours. Control treatments (time) to overcome the natural dormancy: kon-3, kon-6 and kon-12, the examination of germination after 3, 6 and 12 months of storage. Genotype - 2 after growing trend determined phase of stagnation trend. The negative sign of the coefficient c indicating deterioration phenomena, ie the aging of seeds. The growth trend in the first quarter is the result of passing phases of dormancy at L-7 in the period 3-6 months. Dormancy period of 3-6 months, led to a stagnation of growth after germination which continued to grow.
AB  - Za ispitivanje je korišćeno 5 genotipova, 2 su selekcionisane linije (33 i 34). Linija 34 nije dormantna dok L - 33 poseduje dormantnost. Tri genotipa su poreklom iz kolekcije germpazme plavog patlidžana Instituta za povrtarstvo Smederevska Palanka: 2 - 02619, 7 - 00568, 12 - 00823. Genotip 2 ne poseduje dormantnost semena, dok su ostali dormantni. Tretman hlađenjem (HLS) izveden je na 4°C u vremenu od: 96 sati, 72 sata i 48 sati u kontinuitetu. Hormonski tretman giberelinskom kiselinom (GA3) izveden je sa tri koncentracije: 5 ml/100ml; 15 ml/100ml i 25 ml/100ml, u trajanju od 24 sata posle koga je seme stavljeno na klijanje u Petrijeve kutije. Hemijski tretman izveden je kalijum nitratom KNO3 u koncentraciji od: 0,5, 1 i 1,5% rastvorom u trajanju od 24 sata. Dinamika promena prosečne vrednosti klijavosti u vremenu praćena je linijom trenda, a predstavlja prosečno kretanje posmatrane pojave kroz vreme koristeći krivolinijski - parabolični trend (parabola II stepena). Reprezentativnost trenda određena je pomoću koeficijenta determinacije (R2), gde je R2>0,6. Trendovi su razmatrani na vremenskim serijama ispitivanja klijavosti semena (kon) posle ekstrakcije semena i periodičnog ispitivanja (kon-3, kon-6 i kon- 12). Kontrolni tretmani (vremenski) prirodnog prevazilaženja dormantnosti: kon-3, kon-6 i kon- 12, je ispitivanje klijavosti posle 3, 6 i 12 meseci skladištenja. Kod genotipa - 2 posle rasta trenda utvrđena je faza stagnacije tenda Porast trenda u prvom tromesečju posledica je prolaska faze dormantnosti kod L-7 u periodu 3-6 meseci. Mirovanje semena u periodu od 3-6 meseci, dovelo je do stagnacije rasta klijavosti posle čega je nastavljen rast. Tendencija porasta prosečne klijavosti u periodu čuvanja, stagnacija i ponovni rasta / opadanje, različita je bez obzira da li su genotipovi selekcionisane linije ili egzotična germplazma.

AB  - The objective of this study was to evaluate the cytotoxicity, antimicrobial and antioxidant activities of extracts of Daucus carota L., Lycopersicon esculentum Mill. and Capsicum annuum L. grown in Central Serbia. The content of phenolic compounds in the extracts was determined using spectrophotometric and HPLC analysis. These plant extracts proved to be potent inhibitors of cell growth in the cell lines (FemX and LS 174). The IC50 values against FemX and LS174 cell lines were 33.52 +/- 1.08 and 40.22 +/- 0.03 mu g/mL, respectively. The highest antioxidant capacity was found in C. annuum L. (98.01 +/- 0.72 mu g AA/g) and D. carota L. (48.51 +/- 1.18 mu g AA/g) extracts. The test extracts showed strong to moderate antimicrobial activity (19.53 - 312.50 mu g/mL). D. carota L., L. esculentum Mill. and C. annuum L. extracts can serve as new dietary and food supplements.

Interest of producers is higher every day, while the selection of new varieties is very low. The aim of this research was the selection of cucumber intended for fresh consumption with good agronomic traits intended for growing in the greenhouses and in the open field. The researchers of the Institute for Vegetable Crops, Smederevska Palanka created new cucumber hybrid which was recognized by Ministry of Agriculture Forestry and Water Management of the Republic of Serbia, Department for Plant protection in 2013, under the name 'Kralj'.
AB  - Tržišna značajnost salatnog krastavca i nove tehnologije gajenja čine da on postaje jedna od najatraktivnijih povrtarskih vrsta. Zainteresovanost proizvođača je sve veća a domaća selekcija sorata na ovoj povrtarskoj vrsti je jako oskudna. Cilj ovog istraživanja je selekcija salatnog krastavca sa dobrim agronomskim osobinama namenjenog za gajenje u zaštićenom prostoru i na otvorenom polju. Novi hibrid salatnog krastavca Kralj, kreiran je u Institutu za povrtarstvo, Smederevska Palanka. Hibrid je priznat kod MPVŠ, RS, Uprava za zaštitu bilja, 2013 godine pod nazivom Kralj.

AB  - The 15 cherry tomato genotypes from the Institute for Vegetable Crops, Smederevska Palanka were grouped in order to define the start material for breeding. Genotypes were grouped according to: average content of carotenoids (lycopene, β-carotene), total sugars and total acidity in tomato fruits, through PCA (Principal Component Analysis). Correlation matrix showed low, both positive and negative correlation among the researched traits. The level of lycopene was negatively correlated to β-carotene, L-ascorbic acid and total acidity, while it was in positive correlation with total sugars. β-carotene was negatively correlated to l-ascorbic acid and total sugars, but in positive correlation with total acidity, while it was negatively correlated with total sugars. Total sugars were negatively correlated with total acids. The first three components explained 78.55%, while first two components explained 62.07% of total variability. Genotypes on the positive side of both main components (PC1 and PC2) had the highest mean values of L-ascorbic acid (GK67, GK64, GK33, GK19), while genotypes with highest mean values of total sugars were on the negative side of both components (GK153, GK71, GK2, GK75, GK91). Genotypes GK70 and GK1 had high level of β-carotene and total acidity, low level of L-ascorbic acid and minimal mean values of total sugars. GK10, GK20, GK88 and GK74 stood out in the quadrant of negative values of the first main component and positive values of the second main component.

AB  - Applications of bio-stimulant Biocomplex 900 was studied in this paper in the production of tomato (Lycopersicon Essculentum Mill) seedling and the hybrid Belle was used. Indicators of growth and development were studied: mass of fresh root matter, stem and leaves, leaf area and the content of photosynthetic parameters in the leaf. A natural bio-stimulator was used in these studies as the ecological preparation, since it contains the seaweed Ascophyllum nodosum with high content of alginic acids, micro elements and amino acids. The application of this bio-stimulant showed very positive impact, compared to the control (untreated) variant and increased the values of almost all investigated parameters.
AB  - Primene biostimulatora Biocomplex 900 isitana je u ovom radu u proizvodnji rasada paradajza (Lycopersicon Essculentum Mill.) a korišćen je hibrid Belle. Ispitivani pokazatelji rasta i razvića su: masa sveže materije korena, stabla i listova, površina lista i sadržaj fotosintetskih parametara u listu. U ovim istraživanjima korišćen je prirodni biostimulator u funkciji ekološkog preparata, obzirom da je u osnovi preparata sadržan hemijski sastav morske alge Ascophyllum nodosum i odlikuje se visokim sadržajem alginskih kiselina, mikroelemenata i aminokiselina. Primena ovog biostimulatora u poređenju sa kontrolnom (netretiranom) varijantom pokazala je veoma pozitivan uticaj i povećanje vrednosti gotovo svih ispitivanih parametara.

Antioxidant capacity and contents of phenols, ascorbic acid, β-carotene and lycopene in lettuce

AB  - The antioxidant activity of three lettuce varieties (Lactuca sativa L.) Emerald, Vera and Neva, cultivated in two kinds of protected spaces, a glasshouse and a plastic greenhouse, under controlled conditions, was determined. The content of antioxidant compounds: total phenols, flavonoids, L-ascorbic acid, β-carotene and lycopene, were determined in ethanolic extracts of the lettuce with spectrophotometric methods. The largest content of total phenols (78.98±0.67 mg GAE/g of dry extract) was found in ethanolic extract of the lettuce variety Neva cultivated in a plastic greenhouse, whereas the largest content of flavonoids (35.45±0.95 mg RU/g of dry extract) was displayed in the lettuce Emerald cultivated in a glasshouse. It was observed that the lettuce cultivated in the glasshouse contained a somewhat higher content of L-ascorbic acid than the lettuce same variety from plastic greenhouse. The content of lycopene in the examined lettuce is negligible, and the content of β-carotene is low. On the other hand, the high content of phenolic components causes favourable antioxidant properties found in all varieties of examined lettuce.
AB  - Određena je antioksidativna aktivnost tri sorte salate (Lactuca sativa L.) Emerald, Vera i Neva gajene u dve vrste zaštićenog prostora stakleniku i plasteniku pri kontrolisanim uslovima. Sadržaji antioksidativnih komponenti: ukupni fenoli, flavonoidi, L-askorbinska kiselina, β-karoten i likopen, određeni su u etanolskim ekstraktima salata spektrofotometrijskim metodama. Dobijeno je da najveći sadržaj ukupnih fenola (78,98 ± 0,67 mg GAE/g suvog ekstrakta) ima etanolski ekstrakt salate sorte Neva gajene u plasteniku, dok salata Emerald gajena u stakleniku ima najveći sadržaj flavonoida (35,45±0,95 mg RU/g suvog ekstrakta). Zapaženo je da salate gajene u stakleniku imaju nešto veći sadržaj L-askorbinske kiseline od salate istih sorti iz plastenika. Sadržaj likopena u ispitivanim salatama je zanemarljiv, a β-karotena je nizak. S druge strane visok sadržaj fenolnih komponenti uzrokuju dobre antioksidativne osobine nađene u svim sortama ispitivanih salata.

Understanding and overcoming seed dormancy in eggplant (Solanum melongena L.) breeding lines

AB  - The seed dormancy of six eggplant (Solanum melongena L.) genotypes were studied. Two genotypes (33 and 34) were breeding lines while the other four (1-00261, 2-02619, 7-00568, 12–00823) belonged to the exotic germplasm of the Institute for Vegetable Crops in Smederevska Palanka. In order to break the dormancy, the seed was treated with: (1) low temperature, at 4 0C for 96 hours (4 days), 72 hours (3 days) and 48 hours (2 days), continually; (2) hormones, gibberellic acid (GA3) in three concentrations: 5 ml/100 ml, 15 ml/100 ml, and 25 ml/100 ml for 24 hours and after that seeds were allowed to germinate; (3) chemicals, with potassium nitrate KNO3 solution at concentrations 0.5, 1 and 1.5% for 24 hours. Non-treated seed was the control. The trial was set according to two-factorial ANOVA, with four repetitions. The AMMI model was applied for analyzing the interaction of genotypes and treatments for increasing seed germination (break of dormancy). Genotype 12 reacted most favorably to treatments KNO3 1%, KNO3 1.5%, GA3 15 mg/100 ml and GA3 25mg/100 ml. Three genotypes (33, 7 and 12) represent the least stable genotypes, since they reacted positively to all treatments, and most intensively to treatment with GA3 25 ml/100 ml. The low temperature treatment increased germination but not in the expected range, since the highest impact had the low temperature regime for 48 hours.

AB  - Full diallel cross without reciprocals has been performed in order to hybridize five divergent parental genotypes (KP-01, KP-03, S-15, CH-1 and HM-6) and obtain progeny of F-1 and F-2 hybrids. The aim of this study has been to research the divergence of parents of F-1 and F-2 hybrids by applying the cluster analysis based on morphological markers, calculating the values of (according to UPOV) genotypes of parents and F-1 hybrids, and quantitative traits, taking into account the effect of five traits (early ripening, number of fruits per plant, pericarp thickness, fruit weight and vitamin C content). Cluster analysis based on quantitative values gave more applicable results in pepper breeding comparing to cluster analysis based on morphological factors. The most important trait in F-1 and F-2 generation has been fruit weight.

abstract = "Full diallel cross without reciprocals has been performed in order to hybridize five divergent parental genotypes (KP-01, KP-03, S-15, CH-1 and HM-6) and obtain progeny of F-1 and F-2 hybrids. The aim of this study has been to research the divergence of parents of F-1 and F-2 hybrids by applying the cluster analysis based on morphological markers, calculating the values of (according to UPOV) genotypes of parents and F-1 hybrids, and quantitative traits, taking into account the effect of five traits (early ripening, number of fruits per plant, pericarp thickness, fruit weight and vitamin C content). Cluster analysis based on quantitative values gave more applicable results in pepper breeding comparing to cluster analysis based on morphological factors. The most important trait in F-1 and F-2 generation has been fruit weight.",

AB  - Proizvodnja povrća predstavlja najintenzivniju granu biljne proizvodnje sa
visokom akumulativnošću i ekonomskim efektima. Posebno se dobit iz ove
prozvodnje u velikoj meri povećava gajenjem biljaka u zaštićenim
prostorima. U okviru strukture proizvodnje povrća u našoj zemlji među
najzastupljenijim vrstama je paradajz, posebno u zaštićenim prostorima gde
dominira njegovo gajenje, sa učešćem oko 70 %.
Velika je uloga i značaj proizvodnje paradajza u nacionalnoj privredi
Republike Srbije, jer zauzima oko 7% setvenih površina sa visokom
godišnjom produkcijom, koja se i izvozno orjentiše. Paradajz je značajan i sa
visokim učešćem u ukupnoj potrošnji povrća po glavi stanovnika, kako
svežeg, tako i raznih prerađenih oblika, što utiče na pokretanje i
prerađivačkih kapaciteta u našoj zemlji.
Proizvodnja paradajza karakteriše se ogromnim ulaganjima i poslednjih
godina zahteva primenu savremene tehnologije i više nego ikada zahteva
naučno i stručno znanje koje je aplikativno u praksi. Savremena komercijalna
proizvodnja paradajza u našoj zemlji tražila je to znanje sintetizovano na
jednom mestu i osetila se jedna potreba za ovakvom vrstom knjige koja
predstavlja i prvu monografiju o paradajzu u našoj zemlji. Ovoj konstataciji
još više doprinosi i sama činjenica da u ovom periodu tranzicije kod nas
dolazi i do prestruktuiranja proizvođača povrća, koji nisu edukovani za ovu
visoko zahtevnu proizvodnju, pa je stručno znanje neophodno potrebno.
U monografiji su prikazani sublimirani mnogobrojni rezultati sopstvenih
naučnih istraživanja autora i njihova praktična iskustva proistekla iz
dugogodišnjeg naučnog rada i saradnje u Institutu za povrtarstvo u
Smederevskoj Palanci i na Agronomskom fakultetu u Čačku. Pored
sopstvenih istraživanja prikazani su i rezultati drugih vodećih autora, kako
domaćih, tako i inostranih iz oblasti proučavanja paradajza. Naučno i stručno
znanje sa ogromnom vrednošću, prikazano kroz mnoštvo citirane literature,
težili smo da sintetizujemo i uklopimo u homogenu celinu ove monografije,
što joj nadamo se daje i poseban dar i vrednost. Institut za povrtarstvo iz
Smederevske Palanke i Agronomski fakultet iz Čačka, kao dve dokazane i
afirmisane naučne institucije imaju dugogodišnju plodnu saradnju, koja je
posebno intenzivirana poslednjih godina u zajedničkom učešću na naučnim
projektima iz čega je proistekla i ova monografija, kao zajedničko izdanje.
Prikazana materija sistematizovana je sa osnovnim ciljem da njenog čitaoca
upozna sa paradajzom, kao povrtarskom vrstom i prikazana po modelu, gde
se na početku njen korisnik polako uvodi i upoznaje sa ovim povrćem, a
potom prelazi na naučni i stručni deo i savremenu proizvodnju, sa mnoštvom
autorskih fotografija u samom tekstu, što je i posebna vrednost ove
monografije.
Monografija je namenjena širokom krugu korisnika, počev od studenata svih
Poljoprivrednih fakulteta u zemlji, koji je mogu koristiti kao udžbeničku
literaturu za predmet Povrtarstvo, kome je prilagođena izložena materija.
Pored studenata osnovnih akademskih studija može se preporučiti i biti od
koristi i studentima na master i doktorskim studijama iz oblasti povrtarstva,
kao i naučnim radnicima. Autori su imali u vidu da će knjigu koristiti i
poljoprivredni stručnjaci na terenu i u proizvodnji, kao i sami proizvođači
ovog povrća, pa je monografija pisana i u tom duhu i namenjena je svima
koji žele da se bave ovom proizvodnjom, a prevashodno onima koji vole
paradajz.

AB  - Three tomato genotypes (F1
-18 rin, Athens F1
 and K-91) were
studied during postharvest period. In the first experiment decay of ripe and
immature fruits were observed. Significant differences between the average
weights were identified in immature rin wild homozygote fruits and heterozygote, respectively. In the second experiment, half of fruits were treated with
etrel and the control was without treatment. Then, maturation and decay of
fruits was followed. It was observed that the heterozygote fruits have longer
shelf life and quality during preservation then the wild type.
AB  - Ispitivano je ponašanje plodova paradajza tri genotipa (F1-18 rin, Atina F1 i K-91)
u periodu nakon njihovog branja. U okviru prvog ogleda je posmatrano propadanje zrelih i zelenih plodova. Značajne razlike između prosečnih masa su utvrđene kod zelenih
plodova između rin homozigota i divljeg tipa odnosno heterozigota. U okviru drugog
ogleda polovina plodova je tretirana etrelom a kontrolna varijanta je bila bez tretmana.
Praćeno je sazrevanje i propadanje plodova. U okviru naših istraživanja su utvrđene
različite reakcije pojedinih genotipova na tretman etafonom. Najuočljivija je ubrzana
pojava boje kod genotipova sa uniformnim sazrevanjem, kao i ubrzano starenje plodova
kod ovog genotipa. Ubrzano su propadali i plodovi rin homozigota, iako predhodno
nisu promenili boju. U slučaju plodova heterozigota F1-18 rin (rin/+) utvrđeno je slično
ponašanje kao i kod plodova Atina F1 (divlji tip), sa tom razlikom da su dugotrajniji i
imaju duži “shelf life” od genotipa divljeg. U odnosu na plodove rin homozigota (K91), plodovi heterozigota (F1-18 rin) imaju kraći rok preživljavanja. Iniciranje bržeg
sazrevanja etilenom predstavlja način kontrole sazrevanja plodova posle branja što je od
velike važnosti za komercijalno povrtarstvo.

Accumulation of Nitrate in Spinach Depending on Forms and Doses of Nitrogen

AB  - Nitrogen, as one of the most important element of nutrition, has lots of specifics. Its adsorption by plants directly depends on its content in the soil, as well as from the form and doses of nitrogen fertilizers. Spinach belongs to the group of nitrophillic vegetables. Since nitrogen overdoses can jeopardize spinach nutritive value, a special attention should be given to its nitrogen fertilization. The experimental part of this research was conducted during spring of 2009 and 2010 by applying two types of nitrogen fertilizers (CAN and urea) in three variants (80, 160 and 240 kg/ha N). The testing was performed on commercial variety Matador (Institute for Vegetable Crops, Smederevska Palanka). The results show that the use of high doses of nitrogen caused higher accumulation of nitrate in spinach. Statistically significant higher level of nitrogen was found in leaves treated with CAN comparing to urea. Spinach yield was directly dependent from the nitrogen doses supplied, but no statistically significant difference was found among nitrogen forms.

Antimicrobial Activity of Lettuce (Lactuca sativa L.) Extract Grown in Plastic and Glasshouses

AB  - Lettuce (Lactuca sativa L.) has been more and more present in the everyday nutrition in the last few years, with very characteristic seasonal consumption. This vegetable has a high prophylactic effect due to high level of biologically active matters in it. Its strong and visually attractive colours indicate the presence of phenol compounds and therefore the antimicrobial activity. Lettuce in this research has been grown in the winter in two types of controlled conditions: plastic and glass houses. The research material was the variety Neva belonging to olive-butter type of lettuce, originating from Institute for Vegetable Crops from Smederevska Palanka. At the horticultural maturity, lettuce samples have been tested for antibacterial activity. Extracts of lettuce leaves were prepared by cold maceration with 50% ethanol. In order to determinate the antimicrobial activity of the extract, clean cultures originating from The Institute of Virology, Vaccines and Sera Torlak: Staphylococcus aureus ATCC 25923, Klebsiella pneumoniae ATCC13883, Escherichia coli ATCC 25922, Proteus vulgaris ATCC13315, Proteus mirabilis ATCC14153, Bacillus subtilis ATCC6633, Candida albicans ATCC10231, Aspergillus niger ATCC16404 have been used. Antimicrobial activity was determined by using microdilution. Reference antibiotics used for bacterial strains have been Amracin and Nystatin for fungal strains. The research aimed to establish antimicrobial effect of lettuce extract originating glass house (S-1) and plastic house (S-2) in order to determinate the possibility of using these extracts in the pharmaceutical and food industry as a potential "natural preservative". The results showed that the best antimicrobial activity had lettuce extract from S2 plastic house on strains Aspergillus niger and Bacillus subtilis in concentration 19,53 mu g/ml while lettuce extract S1 from green house has been 78,125 mu g/ml on all researched strains except on Proteus mirabilis and Staphylococcus aureus.

abstract = "Lettuce (Lactuca sativa L.) has been more and more present in the everyday nutrition in the last few years, with very characteristic seasonal consumption. This vegetable has a high prophylactic effect due to high level of biologically active matters in it. Its strong and visually attractive colours indicate the presence of phenol compounds and therefore the antimicrobial activity. Lettuce in this research has been grown in the winter in two types of controlled conditions: plastic and glass houses. The research material was the variety Neva belonging to olive-butter type of lettuce, originating from Institute for Vegetable Crops from Smederevska Palanka. At the horticultural maturity, lettuce samples have been tested for antibacterial activity. Extracts of lettuce leaves were prepared by cold maceration with 50% ethanol. In order to determinate the antimicrobial activity of the extract, clean cultures originating from The Institute of Virology, Vaccines and Sera Torlak: Staphylococcus aureus ATCC 25923, Klebsiella pneumoniae ATCC13883, Escherichia coli ATCC 25922, Proteus vulgaris ATCC13315, Proteus mirabilis ATCC14153, Bacillus subtilis ATCC6633, Candida albicans ATCC10231, Aspergillus niger ATCC16404 have been used. AB  - Stability and ability to produce enough seed material is of a strategic importance for every country with serious agricultural production. Breeding centers in Republic of Serbia represent the main base of seed production for both field and vegetable crops. They fulfill the assortment through the breeding process. Seed production, packing and distribution are both in private and state firms. The produced seed only partly accomplishes the needs in the Republic of Serbia, while a part of the assortment is imported. Regarding vegetable production, it is almost certain that farmers use, except for the organic (dynamic, bio and other production) their own seeds, i.e. seeds collected and reproduced in different areas. This kind of reproduction is, surely, of the worse quality. Serbian government is aiming to stop this 'illegal' seed production by trying to force the law in order to accomplish at least the minimal quality of seed. Assortment in Serbia is adjusted to agro-ecological conditions of Balkan Peninsula and has found its market all over Balkan and Europe. During the existence of the former Yugoslavia seed production has been sufficient for the country and even exported, mostly to the former USSR. In the last four years vegetable seed has been produced in 956 ha in 2007 (457 ha potato), 1152 (464 ha potato) in 2008, 1219 ha (380 ha potato) in 2009 and 976 ha (301 ha potato) in 2010.

AB  - Soil fertility is of the most importance in organizing successful plant production and gaining high yield. Protection and preservation of soil fertility are of a high relevance in contemporary agriculture, since inadequate production technology and particularly the application of high doses of fertilizers very often leads to degradation processes and soil damage. The most common mistake is the overdose of nitrogen fertilizers. Therefore, in order to research the changes of basic agro-chemical traits of soil, the increased doses of nitrogen in carrot growing have been researched. The experimental part of the research was performed on sandy loam cambisol, with the following applications of nitrogen: 0, 60, 120 and 180 kgN/ha through KAN fertilizer. After carrot harvesting, the content of humus, phosphorus and potassium decreased, while the content of nitrate nitrogen was directly dependent of growing nitrogen doses. The lowest average content of NO3-N was determined in control (24.7 mg/kg), and the highest by applying 180 kgN/ha (47.0 mg/kg).
AB  - Plodnost zemljišta predstavlja jedan od najvažnijih faktora za uspešnu biljnu proizvodnju i postizanje visokih prinosa. Zaštita i očuvanje plodnosti zemljišta predstavlja najvažniji zadatak i aktuelan problem poljoprivredne struke, jer neadekvatnom tehnologijom proizvodnje, a posebno primenom visokih doza đubriva veoma često dolazi do degradacionih procesa i oštećenja zemljišta. Najčešće greške se javljaju prekomernim korišćenjem azotnih đubriva, pa je u cilju ispitivanja promena osnovnih agrohemijskih osobina zemljišta ispitivan uticaj rastućih doza azota pri gajenju mrkve. Eksperimentalni deo istraživanja izveden je na zemljištu tipa smonica u ogajnjačavanju, sa primenom doza azota: 0, 60, 120 i 180 kgN/ha kroz prihranjiavnje sa KAN-om. Nakon vađenja mrkve, sadržaj humusa, pristupačnog fosfora i kalijuma se smanjio, dok je sadržaj nitratnog azota pokazao direktnu zavisnost od rastućih doza azota. Najmanji prosečni sadržaj NO3-N je utvrđen na kontrolnoj varijanti (24.7 mg/kg), a najveći primenom 180 kgN/ha (47.0 mg/kg), što je u okviru dozvoljenih vrednosti.

AB  - Proučavanje populacija pasulja prikupljenih tokom rada na terenu, poseta
proizvođačima ili na lokalnim pijacama centralne Srbije, ima izuzetno veliki značaj za
program oplemenjivanja pasulja u Institutu za povrtarstvo d.o.o. u Smederevskoj
Palanci. U početnim istraživanjima obuhvaćene su standardne osobine: visina stabla,
broj mahuna po biljci, broj zrna u mahuni, masa 1000 semena, oblik i boja zrna,
potencijalna rezistentnost. Istraživanjima su obuhvaćene 37 populacija.
Od posmatranih osobina u radu su prokazane tri osobine: visina stabla, broj zrna u
mahuni i masa 1000 semena

In the initial studies of standard traits of beans: stalk height, number of pods per plant, number of grains in pod, weight of 1000 grains, shape and col our of grains, potential resistance have been examined. The study covered 37 populations. From all re searched traits, this pa per deals with three: stalk height, number of grains per pod and weight of 1000 grains.

Antimikrobna aktivnost etanolnih ekstrakata paradajza i paprike

AB  - Plodovi paradajza (Lycopersicon esculentum Mill.) i paprike (Capsicum annum L.) ne samo da imaju hranljivu i dijetetsku ulogu već imaju široki profilaktički značaj u organizmu. Antimikrobna aktivnost etanolnih ekstrakata paradajza i paprike je određena disk difuzionom i mikrodilucionom metodom. Etanolni ekstrakti paprike i paradajza su pokazali prema Salmonela enteritidis slično antibakterijsko dejstvo (prečnik zone inhibicije rasta kod paradajza je 28 mm, a kod paprike 29 mm, dok je prema Staphilococcus aureus ekstrakt paradajza (27 mm) pokazao veću aktivnost nego ekstrakt paprike (21 mm). Veće inhibitorno dejstvo prema Escherichia coli je pokazao ekstrakt paradajza (24 mm) u odnosu na ekstrakt paprike (17 mm). Kao test mikroorganizmi korišćene su čiste kulture: Staphilococcus aureus ATCC 25923, Klebsiella pneumoniae ATCC13883, Escherichia coli ATCC 25922, Proteus vlgaris ATCC13315, Salmonela enteritidis (D) ATCC 13076, Bacillus suptilis ATCC6633, Candida albicans ATCC10231, Aspergillus niger ATCC16404. Mikrodilucionom metodom određene su minimalne inhibitorne koncentracije (MIC). Upoređeno je i antimikrobno delovanje ekstrakta sa referentnim antibiotikom amracinom za bakterije i antimikotikom nistatinom za gljive. Cilj rada je utvrditi mogućnost primene ovih ekstrakata kao konzervanasa u industriji hrane. Dobijeni rezultati pokazuju da ekstrakti paradajza i paprike ispoljavaju značajnu antimikrobnu aktivnost.
AB  - Tomato (Lycopersicon esculentum Mill.) and pepper (Capsicum annuum L.) are not only nutritious and dietetic products, but they also have a wider significance for the organism as prophylactics. The antimicrobial activity has been determined by the disc diffusion method for the strains of Staphylococcus aureus ATCC 25923, Salmonela enteritidis(D) ATCC 13076 and Escherichia coli ATCC 25922. Tomato and pepper extracts have produced a similar antibacterial effect on Salmonela enteritidis (The inhibition zone diameter of tomato and pepper is 28 and 29 mm) whereas in the case of Staphilococcus aureus, tomato extract (27 mm) has demonstrated a greater activity than pepper extract (21 mm). A greater inhibitory effect towards Escherichia coli has been produced by tomato extract (24 mm) in comparison to pepper extract (17 mm). The inhibition zone diameters have been compared with the reference antibiotic chloramphenicol and their value is 23 mm for Staphylococcus aureus and Escherichia coli, and 27 mm for Salmonela enteritidis. MIC μg/ml of papper extract for Staphylococcus aureus 78.125; Salmonela enteritidis(D) is 39.1; Escherichia coli is 78.125. MIC μg/ml of tomato extract Staphylococcus aureus 156.25; Salmonela enteritidis(D) is 19.53; Escherichia coli is 78.125. To determine the antimicrobial activity of the extract as the test organisms, Staphylococcus aureus ATCC 25923, Klebsiella pneumoniae ATCC 13883, Escherichia coli ATCC 25922, Proteus vlgaris ATCC 13315, Salmonella enteritidis (D) ATCC 13076, Bacillus suptilis ATCC 6633, Candida albicans ATCC 10231, Aspergillus niger ATCC 16404. Antimicrobial activity was determined and microdilution method. The extracts possess significant antimicrobial activity.

Kao test mikroorganizmi korišćene su čiste kulture: Staphilococcus aureus ATCC 25923, Klebsiella pneumoniae ATCC13883, Escherichia coli ATCC 25922, Proteus vlgaris ATCC13315, Salmonela enteritidis (D) ATCC 13076, Bacillus suptilis ATCC6633, Candida albicans ATCC10231, Aspergillus niger ATCC16404. Mikrodilucionom metodom određene su minimalne inhibitorne koncentracije (MIC). Upoređeno je i antimikrobno delovanje ekstrakta sa referentnim antibiotikom amracinom za bakterije i antimikotikom nistatinom za gljive. gajene na supstratu koji se sastojao od komposta (75%) i zeoplanta (25%), i
prihranjivane rastvorom mineralnih đubriva: Haifa-Multi-K Mg, 12% N, 0%P, 43%K,
2% Mg, Haifa Poly-feed ME, 11% azota, 44% fosfora i 11% i mikroelemenata, KP
(K+P) - mešavina ova dva đubriva i kontrolna varijanta je tretirana sa 12% azota.
Najmanji sadržaj β-karotina imao je tretman sa povišenim sadržajem kalijuma, što se
može tumačiti ubrzavanjem procesa sazrevanja pod uticajem kalijumovih jona, odnosno
da se većina β-karotina transformisala u likopin.
AB  - In order to research lycopene and beta carotene production depending on mineral
macro-nutrition, an industrial tomato cv. Marko F1 has been used. Plants have been
grown on substrate made from compost (75%) and zeolite (25%) and treated with
mineral fertilizers solution: Haifa-Multi-K Mg, 12% N, 0%P, 43%K, 2% Mg, Haifa
Poly-feed ME, 11% nitrogen, 44% phosphorus and 11% of microelements, KP(K+P) –
mixture of these two fertilizers, while the control has been treated with 12% of nitrogen.
The lowest content of β-carotene had treatment with the increased potassium content,
which can be in connection with maturation process influenced by potassium ions,
which means that the most of β-carotene has been transformed to lycopene.
