AB  - Extracts derived from these plants' medicinal and bioactive constituents are utilized in the
production of dietary supplements, health-safe food, medicinal products, and cosmetics.
Among the pseudocereals widely cultivated in organic agriculture, amaranth, buckwheat,
and quinoa play pivotal roles. These pseudocereals are characterized by their substantial
content of starch, protein, β-carotene, dietary fiber, minerals, vitamins, and other bioactive
constituents. Of particular interest is Amaranthus caudatus L. (Amaranthaceae), which has
garnered increasing scientific and industrial attention owing to its remarkable bioactive
properties, diverse phytochemical composition, and extensive range of pharmacological
actions. In contrast to wheat, rice, and oats, amaranth seeds are gluten-free and contain
30% more proteins with a well-balanced amino acid profile. Beyond its nutritional value,
numerous studies have highlighted the significance of A. caudatus as a potential source of
biologically active compounds, exhibiting anti-diabetic, anti-hyperlipidemic, antiinflammatory,
and anti-hypercholesterolemic effects, as well as antioxidant and
antimicrobial activities. By incorporating amaranth into our diets, we can harness the
manifold benefits of this remarkable pseudocereal, ultimately fostering health promotion
and disease prevention. This work serves as a catalyst for further scientific investigations
in this field, paving the way for innovative technological advancements within the realms
of food, pharmaceuticals, and cosmetics that harness the potential of this extraordinary
plant.

AB  - Производи од слатке паприке су широко комерцијализовани и
конзумирају се на глобалном нивоу. Иако млевена слатка црвена
паприка не представља матрикс који подржава раст
микроорганизама, присуство токсигених плесни и микотоксина се
често детектује. Главни циљ овог рада био је да испита могућност
анализе охратоксина А у млевеној црвеној слаткој паприци
користећи ЕЛИСА методу.
За потребе валидације методе коришћени су сертификован
референтни материјал и један природно контаминиран узорак ниске
концентрације. У циљу испуњења захтева процеса валидације
извршена је процена: лимита детекције (LoD), лимита
квантификације (LoQ), опсега, тачности и прецизности. Добијени
резултати анализираних узорака и процена перформанси наведених
карактеристика показали су да је ова метода у сагласности са
Еурацхем лабораторијским водичем, ЕУ регулативом и да је
адекватна за употребу.
AB  - Sweet pepper products are widely commercialised and consumed
worldwide. Red ground sweet pepper presents unusual characteristics for
microbial growth. However, the presence of mycotoxin producing fungi
and the co-occurrence of mycotoxins in the production chain have been commonly detected. The main aim of this work was to examine the
possibility to analyse ochratoxin A in red ground sweet pepper using
ELISA method.
One certified reference material and one naturaly contaminanted and
randomly selected sample with low level of contamination were used to
validate analytical method. In order to fullfill the requirements defined by
the validation process we evaluated: limit of detection (LOD), limit of
quantification (LOQ), working range, trueness and precision. Results
received by analysing samples and evaluating all of the listed
performance characteristics proved that this method is in compliance with
Eurachem laboratory guides, EU legislation and is 'fit for purpose'.

AB  - U radu je analizirano 10 genotipova ozime pšenice tokom dve
vegetacione sezne (2012/2013, 2013/2014). Eksperimentalni deo ogleda izveden je
na oglednom polju Centra za strna žita u Kragujevcu. Ispitivane su osobine
tehnološkog kvaliteta pšenice: sedimentacija proteina i sadržaj vlažnog glutena.
Rezultati dobijeni u ovim istraživanjima ukazuju da se period oplodnje i nalivanja
zrna, u drugoj proučavanoj godini, odvijao pri nižoj temperaturi vazduha i
ekstremno visokoj količina padavina, što je negativno uticalo na kvalite pšenice. U
proseku, svi genotipovi pšenice su ostvarili niže vrednosti sedimentacije proteina i
sadržaja vlažnog glutena u 2013/2014. u poređenju sa 2012/2013. godinom.
AB  - In these studies, 10 winter wheat genotypes were analyzed during two
growing seasons (2012/2013, 2013/2014). The experimental part of the trial was
conducted on Centre for Small Grains in Kragujevac. There were analyzed some of
the most important technological qualities traits: sedimentation value and wet
gluten content. According to our results, the period of heading and grain filling
characterized by lower air temperatures and extremely high rainfall, which
negatively affected the grain quality of wheat. On average, all genotypes achieved a
lower protein sedimentation value and wet gluten content in 2013/2014.
compared to 2012/2013 year.

Presence of deoxynivalenol in bread in Serbia during 2018-2019

AB  - Deoxynivalenol (DON) is one of several mycotoxins produced by certain Fusarium species
that frequently infect wheat, corn, rice, oats, barley and other grains in the field or during
storage. DON affects animal and human health causing vomiting, acute temporary nausea,
diarrhea, abdominal pain, headache, dizziness and fever. Wheat flour and wheat flour-based
products, such is bread take an essential place in Serbian diet which raises exposure level of
total population in cases of higher contamination. The objective of this study was to evaluate
the presence of DON in wheat flour bread. In this study, a total of 210 samples of wheat flour
bread were collected in the period of 2018-2019. All samples were analyzed for DON by
enzyme-linked immunosorbent assay. DON was detected in 47 out of 210 wheat flour bread
samples (22.38%), at levels ranging from 81 to 214 μg/kg. The maximum contamination level
of DON (214 μg/kg) in this study was found in wholemeal bread. These results suggest not
very high percentage of contaminated samples. However, the level of contamination was
higher in wholemeal bread than in white bread, which raises a risk for consumers of bread
made of whole wheat flour.

Effect of Dilute Alkaline Steeping on Mold Contamination, Toxicity, and Nutritive Value of Maize Malt

AB  - The primary aim of this research was to investigate the effect of dilute alkaline steeping on molds and toxicity of maize malt. Samples of maize were collected from one farm located in the Serbian autonomous region Vojvodina. Steeping regimes were performed by using 0.1, 0.2, and 0.3% NaOH solutions. The effects of these solutions on mold contamination, total aflatoxin (AFLA), deoxynivalenol (DON), zearalenone (ZON), rootlet length, moisture, total nitrogen, content of protein, fat content, ash content, content of total carbohydrates, and energy value of maize malt were evaluated. Steeping in 0.1, 0.2, and 0.3% NaOH reduced the levels of molds from 10(6) to 10(4) CFU/g, and steeping in 0.3% NaOH eliminated some of the mold genera. Also, it significantly reduced (P  lt  0.05) the level of total AFLA, DON, and ZON. However, steeping in (control) water also significantly reduced (P  lt  0.05) the level of DON and ZON. Malting also significantly reduced (P  lt  0.05) total nitrogen and therefore content of proteins. However, steeping in 0.1, 0.2, and 0.3% NaOH caused significantly smaller reductions (P  lt  0.05). Significant reduction (P  lt  0.05) was also observed in the rootlet length, content of fat, and ash content. Steeping in 0.3% NaOH is proposed as a method for the reduction of mold and AFLA, DON, and ZON contamination during maize malting. Energy value of maize increases in the malting process regardless of the steeping regime.

abstract = "The primary aim of this research was to investigate the effect of dilute alkaline steeping on molds and toxicity of maize malt. Samples of maize were collected from one farm located in the Serbian autonomous region Vojvodina. Steeping regimes were performed by using 0.1, 0.2, and 0.3% NaOH solutions. The effects of these solutions on mold contamination, total aflatoxin (AFLA), deoxynivalenol (DON), zearalenone (ZON), rootlet length, moisture, total nitrogen, content of protein, fat content, ash content, content of total carbohydrates, and energy value of maize malt were evaluated. Steeping in 0.1, 0.2, and 0.3% NaOH reduced the levels of molds from 10(6) to 10(4) CFU/g, and steeping in 0.3% NaOH eliminated some of the mold genera. Also, it significantly reduced (P  lt  0.05) the level of total AFLA, DON, and ZON. However, steeping in (control) water also significantly reduced (P  lt  0.05) the level of DON and ZON. Malting also significantly reduced (P  lt  0.05) total nitrogen and therefore content of proteins. However, steeping in 0.1, 0.2, and 0.3% NaOH caused significantly smaller reductions (P  lt  0.05). Significant reduction (P  lt  0.05) was also observed in the rootlet length, content of fat, and ash content. Steeping in 0.3% NaOH is proposed as a method for the reduction of mold and AFLA, DON, and ZON contamination during maize malting. Energy value of maize increases in the malting process regardless of the steeping regime.",

Presence of deoxynivalenol in wheat milling products in Serbia during 2016-2017

AB  - Deoxynivalenol (DON) is one of several mycotoxins produced by certain Fusarium species that frequently infect wheat, corn, rice, oats, barley and other grains in the field or during storage. DON affects animal and human health causing vomiting, acute temporary nausea, diarrhea, abdominal pain, headache, dizziness and fever. The objective of this study was to evaluate the natural occurrence of deoxynivalenol (DON) in white wheat flour, whole wheat flour and wheat bran. In this study, a total of 75 white wheat flour, whole wheat flour and wheat bran samples were collected in the period of 2016-2017. All samples were analyzed for DON by enzyme-linked immunosorbent assay. DON was detected in 23 out of 45 white wheat flour samples (51.11%), at levels ranging from 99 µg/kg to 440 µg/kg. Out of 15 whole wheat flour samples, 14 were contaminated by DON (93.33%), at levels ranging from 98 µg/kg to 479 µg/kg. The maximum contamination level of DON (2,790 µg/kg) in this study was found in wheat bran. Presence of DON was detected in all 15 samples of wheat bran (100%). These results suggest a high percentage of contaminated samples, especially among wheat bran samples, which raises a risk for consumers of wheat bran and the need to monitor final products before consumption.
AB  - Deoksinivalenol (DON) jedan je od nekoliko mikotoksina koje produkuju određene vrste roda Fusarium, koje često kontaminiraju pšenicu, kukuruz, pirinač, ovas, ječam i ostale žitarice, kako u polju, tako i tokom perioda skladištenja. DON utiče na zdravlje ljudi i životinja izazivajući povraćanje, akutne mučnine, dijareju, abdominalni bol, glavobolje, vrtoglavice i groznicu. Cilj ovog istraživanja bio je da se ispita i proceni prirodna pojava deoksini­valenola (DON) u belom pšeničnom brašnu, integralnom pšeničnom brašnu i pšeničnim mekinjama. Ukupno 75 uzoraka belog pšeničnog brašna, integralnog pšeničnog brašna i pšeničnih mekinja uzorkovano je u periodu 2016-2017. Svi uzorci su analizirani na prisustvo DON-a imunoenzimskim ELISA testovima. AB  - Steeping in dilute sodium hydroxide (NaOH) was investigated with the primary aim of reducing molds and preventing toxicity of buckwheat malt. Samples of common buckwheat (Fagopyrum esculentum) obtained from Montenegrin farmers in the mountain area of northern Montenegro were steeped in 0.1, 0.2, and 0.3% NaOH. The effects of these solutions on mold contamination, ochratoxin A (OTA), out-of-steep moisture content (SMC), rootlet length, total nitrogen, total soluble nitrogen (TSN), free amino nitrogen (FAN), diastatic power (DP), and color of buckwheat malt were evaluated. Steeping in 0.1, 0.2, and 0.3% NaOH reduced the levels of molds from 105 to 103 CFU/g and steeping in 0.2% NaOH destroyed some of the mold genera. Steeping in 0.1, 0.2, and 0.3% NaOH reduced the level of OTA, especially in 0.2% NaOH, where the level of OTA after the malting process was below food safety regulations (5 μg/kg), and in 0.3% NaOH, where the level was below the limit of detection (0.1 μg/kg). Steeping in 0.1, 0.2, and 0.3% NaOH significantly (P < 0.05) increased levels of SMC, TSN, FAN, DP, wort color, and pH. However, it significantly reduced (P < 0.05) the level of extract and length of rootlets. The level of OTA contamination in stored buckwheat malt, which contained Penicillium genera, significantly increased (P < 0.05) over a period of 60 and 90 days. Steeping in 0.2% NaOH is proposed as a method for the reduction of mold and OTA contamination during buckwheat malting as well as prevention from further OTA production during storage.
